Delicious Vegan Pear Crisp Recipe

This holiday season, my family received a generously sized box of Harry & David pears. Having never tried them before, I was eager to see what many consider a holiday classic, and let me tell you, they exceeded all expectations. These pears were incredibly soft, sweet, and juicy. With so many pears in the box, we knew we couldn’t possibly eat them all fresh, so I decided to get creative in the kitchen. I whipped up a Pear Crisp, a fun twist on the traditional apple crisp, substituting the pears for a dessert that turned out irresistible.

Ingredients:

Filling:

  • 6 to 8 sliced pears
  • 1 tbsp. lemon juice
  • 1/3 cup sugar
  • 1 tbsp. cornstarch
  • 1 tbsp. cinnamon

Topping:

  • 1/3 cup flour
  • 1/2 cup brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3-5 tbsp. dairy-free butter (I like to use Earth Balance or Trader Joes dairy-free butter)
  • 1/3 old fashioned rolled oats
  • 1/4 chopped walnuts (you can omit if you don’t like nuts in dessert)

Instructions:

Filling:

  • Core pears and cut lengthwise (peeling is optional)
  • Coat pear slices with lemon juice in a 9×13 baking dish
  • Whisk together sugar, cornstarch, and cinnamon. Add this mixture to the pears and coat evenly.

Topping:

  • Combine flour, brown sugar, cinnamon and salt.
  • With a fork, add butter to the mixture and form into crumbles (start with 3 tbsp of butter and add more if needed)
  • Add oats and chopped walnuts
  • Sprinkle mixture evenly over the pears
  • Bake at 375 for 40 min. until pears are tender
